So the three day weekend is over…did anyone else find it hard to wake up and get motivated to move this morning?
I know I promised to have pics to post of the diy project for the basement that I was going to work on yesterday but…the lake called my name… and I didn’t get to the project… I know, I know. Lame excuse. You will just have to wait in suspense. Don’t worry, it will do you good!
I did find time yesterday between riding my bike, soaking up some sun and grocery shopping to throw a little get together. I thought I would share a recipe with you from our dinner last night…. I stumbled on this recipe sometime last week and I just KNEW that I had to make it! It was so quick and easy. I left the lake at 5:30pm and had everything ready by 7:15pm when everyone started arriving… I love quick recipes!
Ingredients
- 2 poundsGround Beef
- 1 teaspoonSeasoned Salt
- 1 teaspoonGround Black Pepper
- 1 teaspoonLemon Pepper Or Other Seasoning (Note: I used Cajun Seasoning with a bit of Cumin thrown in)
- 1 TablespoonWorcestershire Sauce
- 8 stripsThin/regular Bacon
- ΒΌ cupsBarbecue Sauce
- 8 slices(shavings) Cheese: Cheddar, Jack, Etc.
- 8 wholeDinner Rolls (or Slider Rolls) (Note: My fave are Hawaiian Sweet Rolls)
Preparation Instructions
Combine meat with all seasoning ingredients. Knead with hands to combine. Form into small-to-medium sized balls.
Cut slices of bacon in half lengthwise. Wrap one half around ball of hamburger, pulling slightly to keep taut. Smooth to secure seam. Repeat with other half of bacon, ending seam in the same place.
Place patties, bacon seam side down, on a baking pan with a drip tray sprayed with nonstick cooking spray. Press gently on each patty to flatten as much as you can without squeezing meat out of the edges. Refrigerate for 20 to 30 minutes to firm.
Preheat oven to 400 degrees.
Brush each patty liberally with barbecue sauce. Bake for 20 to 25 minutes, or until bacon is cooked to your specifications.
Remove from oven and lay a cheese shaving on each patty. Serve on a roll with your choice of toppings/condiments.
