I am a creature of habit.
I get up at the same time. Sit in the same spot in my kitchen. Eat the same thing for breakfast.
2 eggs and a spinach smoothie.
Last night when I was at the grocery store, I was making my same route around the organic section… picking up milk and eggs… when I decided to step out of my box.
Instead of reaching for the soymilk, I grabbed coconut milk.
I know. Rebellious. Look out World!
Coconut milk and I had never made each other’s acquaintance, and I felt that last night was the night…
It was good. It was real good.
Riding on the waves of adrenaline from the previous night of rebellion at the grocery store, I decided to switch up my morning smoothie.
Instead of water as the liquid, I added the coconut milk.
And the Angels sang… it was a taste-bud revolution.
It was so good, I decided that I would be a terrible person if I didn’t share my concoction with you…
Here’s what you need:
- 1 1/2 handful blueberries
- 1 handful raspberries
- 2 large handfuls spinach leaves
- 1 cup coconut milk
Blend together until smooth.
Now you can vary the smoothie as you wish… did anyone else flashback to the Princess Bride with the phrase “as you wish”?
No? Me neither.
But seriously. If you’re not used to spinach smoothies, start out with less spinach and more berries. Then work your way to more spinach…add in more fruit. Mix in a little OJ. There is a vast ocean of smoothie excellence out there waiting for you… just make sure you remember the spinach…
