One of my favorite things in the world is having friends over for dinner. I love sitting around the table with a full stomach and an empty glass, laughing with my dear friends.
Lena is so great about hosting and I’ve tended to shy away from it seeing as how we had ABSOLUTELY no seating in our little living room. Thankfully, that is no longer the case. We recently received some new (to us) furniture and can comfortably sit 8-9 people without having to pull in chairs from the other room.
This my friends, is an accomplishment.
We decided Saturday was our turn to host and I was so jazzed because I haven’t had a chance to spend some quality time in my kitchen in the last few weeks.
I knew what I wanted to make for dinner… sliders on Hawaiian sweet rolls… but I was at a loss for a semi-healthy, not-too-sweet dessert.
And then it came to me… fruit pizza.
I’ve made “build-your-own” fruit pizzas in the past, but never a full one.
I cracked open my favorite cook book and got to work…
I used a chewy sugar cookie recipe from Cook’s Illustrated for the “crust” of the pizza. Since I was shooting for a more healthy version of this, I substituted one of the cups of flour for whole wheat flour instead.
I baked the crust for 25 minutes at 375 degrees… I maybe would have done 2-5 minutes less though…
I bought a huge thing of Cool Whip and used that as the “sauce”… typically I would have mixed up some sort of butter cream marshmallow fluffy goodness to go on it… but we’re thinking in terms of health, right?
My favorite part about the whole thing was the fruit. I’m a fruit addict. I just chose some that looked pretty at the store to use… feel free to pick whatever type of fruit that makes your heart go pitter-patter.
I literally just tossed the fruit on the pizza… it made it feel more like a pizza and less like… well.. cake-y. Kiwi makes for a good mini-Frisbee in case you were wondering.
So good… and semi-healthy. You can even eat if for breakfast!
Okay, well sort of.
Don’t eat it for breakfast. Don’t be like me. Resist temptation and send it home with your guests. They will love you forever.
