For those of you here in the States, I hope you enjoyed a very restful holiday weekend.
Did you do a lot of cooking? Lounging? Swimming? Sunning?
I did all of the above. Let me just tell you, I haven’t enjoyed a holiday weekend like I did this one in a long time. It was such a relaxing weekend full of friends, fun and sun.
We had people over last night for a pot-luck (or carry-in if you’re from the Midwest).
In case you don’t know, that’s where everyone brings a dish… typically you end up with this crazy assortment of food, but somehow this time, we all seemed to coordinate quite well.
I made the main dish and had people bring different sides/desserts….
If you know two things about it’s this:
1. I’m Texan… therefore, I was born eating red meat.
2. Bacon is my addiction.
I made Bacon Sliders yesterday, but only because I was inspired by the meatloaf I made last week…
It was delicious. Unfortunately, yours truly was a total space cadet and forgot to put it away that night and it ended up spoiling… whomp, whomp. Definitely a bummer since this meatloaf was the bomb!
Here’s what I made last night… they were served on little slider buns (so cute!) but I snapped this pic after everyone had eaten… meaning most of the slider buns had disappeared.
I used both recipes from The Pioneer Woman and adapted them to my liking.
They’re both definite summer foods and are like magic…. meaning they disappear before your eyes.
