When You Can’t Go to Greece and Back in 20 Minutes

I’ve really been struggling lately when it comes to cooking.

I’m either (A) Too tired to cook (B) Unmotivated to try something new (C) Don’t have the time to make something grand or (D) All of the above.

Because of my shortcomings and because I know I can’t be the only one out there in the world who doesn’t have the time/motivation/energy to spend on hour + meals per night, I’m going to be posting some under 30 minute recipes that I’ve been using over the next few weeks… and guess what? They’re super cheap.

I was motivated by my mother in law a few weeks back when she mentioned to me these pita pizza’s she had made for dinner that week. I asked her what she did and how she did it and then decided to make it my own.

What you’ll need:

  • Extra Virgin Olive Oil (EVOO)
  • Pita bread
  • Olives  (kalamata if you got ‘em, don’t mata if you don’t)
  • Feta cheese (or goat cheese if that’s your thing)
  • Spinach

I seriously whipped this up in a matter of 20 minutes including bake time.

You’ll want to brush your pita with the EVOO, make sure to get the edges so they get nice and crisp. Then layer your remaining ingredients. I did cheese, spinach, olives, more cheese… but you can do your own thing.

Note: I also used the Mediterranean Herb feta cheese, I highly recommend it. It was delicious.

Then put your mini-pizza’s in the oven and bake at 350 for 10 minutes. That’s it folks. That’s all you gotta do.

Oh and I served it with couscous… like duh.
