Baked Ham and Eggs on the Fly

We are the generation known for being constantly on the go, are we not?

Okay, maybe I shouldn’t speak for all of us… maybe I should just speak for myself.

Sometimes I feel like I’m constantly running from one place to the next and never taking a breath. When it comes to refueling, filling up my car is a necessity, but taking time out to refuel my body?? Well, that’s optional.

Is this striking a cord with anyone else but me? Bueller? Bueller?

Keeping this in mind, I made something this morning. I found the idea from The Simple Delights. She originally made them as a low-calorie side for breakfast, I decided that they were the perfect answer to the on-the-fly breakfast food.

They’re portable, easy to make, cheap and high in protein. Check, check, check and check.

You’ll need:

  • Ham deli slices
  • Spepper
  • Eggs
  • Cooking spray

Start with your muffin pan and give it a good spray. Then line the pan with the ham creating little craters for the eggs to fit into.

Crack your eggs and fit them into the little ham nests… sprinkle with salt and pepper.

Bake at 400 degrees. If you’re going to be eating at home and like your eggs a bit runny, then bake for about 13 minutes. If you’re planning on taking them on the road and need them to be a bit firm, then anywhere from 15-17 minutes should do the trick. Just make sure you’re watching the ham to make sure they edges don’t burn.

Take them out and let them cool. Sprinkle chives from your garden on them if that’s your thing…

Or if you have the time to sit at the table and stay awhile, dress these cuties up with some salsa and avocado slice…

I’m currently eating the above picture as we speak… so good… and the even better news is… I’ll have something to keep me refueled all week… or at least until they run out.

  1. Such a smart idea, and I can’t get over how simple it is. You’re right about being busy. I constantly wish there were an extra 5 or 6 hours to the afternoon.
