I had mentioned that I am going to start posting a recipe a week that I’ve been using that is SUPER quick and hopefully delicious.
Tuesday night I made baked sweet and sour chicken that I spotted on Pinterest from Mel’s Kitchen Cafe. It was delicious but definitely did not take under a half an hour… I was procrastinating on work and needed something to take my mind off things… I may or may not have spent the better part of the evening in one of my favorite spots… standing at my stove.
I seriously do recommend the chicken, it was SOO good and I will totally be making it again. I also made fried rice… oh.. my… golly. I think I dreamed about it last night.
Something that I have made recently, so recently as I made it AGAIN last night, is roasted pork loin. The first time I made it in the crock pot and last night I made it in the oven. It pretty much turned out the exact same either way, deliciously tender and juicy.
As good as it was, I still think pictures of meat look disgusting. It must be the latent vegetarian coming out in me.
Basically I bought a 2 pound loin from the store, dropped it in the crock pot, rubbed it down with garlic powder and then placed herbs from my garden on top… sage, rosemary, thyme and chives. I poured in a small amount of chicken broth ( I know… total faux pas) and set it to high and went about my day. After 4 hours it was perfect.
It was that simple… and it was on sale for $3.00. That means that between J, my sister-in-law and myself, that meal cost about $1/person.
If you don’t have a crock-pot, don’t worry. Put it in a shallow baking dish, rub your herbs on it, and cover with foil. Bake at 375 for about 1 hour 45 minutes and it will be perfect!
It reminds me of Sunday dinner… it’s definitely a comfort food.
Alright, back to the grind. It’s finals week… totally crunch time.
