Baked Apples and the First Day of School

I’m currently sitting on the couch at approximately 2 hours before I would normally wake up.

Why you ask?

It’s J’s first day of school!

Call me a total weirdo but I couldn’t stand the thought of him traipsing off to class on the first day without seeing a friendly face first thing in the morning. I mean what kind of wife would I be if I didn’t make him pose by his car so I could get the traditional “first day of school” pic that all children hate and all mothers adore?

P.S. Don’t tell J that I posted this on here…. it’ll be our little secret :)

In other news, I was had a major sweet tooth craving this weekend. Who’s surprised?

It was too cold for ice cream and a warm, fruit dessert sounded like it would absolutely do the trick. The only problem was that is happened to be Saturday night, the night before I go grocery shopping… which means the house is pretty much bare in terms of food.

Thank goodness I had Elisabeth, my sister-in-law there with me. She suggested an old concoction that her and her roommates in college would cook up when they wanted something sweet but didn’t want to spend all those cals…

Baked apples with a cereal crumble.

Here’s what you need…

First, start off microwaving the apples for a little bit… not too long just a couple of minutes to start them off. Then add everything you need: brown sugar, butter, cinnamon, repeat.

Once you have the apples layered accordingly, take some cereal (we used a store-brand version of Kashi Go Lean Crunch) to make your crumble. Feel free to put some bits of butter on top of the cereal as you wish.

Bake at 350 until soft. For us it was about 15-20 minutes.

This would be amazing with a side of ice cream. Heck, most things are aren’t they?

And another bonus… my house smelled of baked cinnamon apples for the rest of the night!

Okay, I need to go back to sleep.
