I just walked in the door from the bakery this morning with full intentions of posting something grand before I raced off to school…
Unfortunately I wasted spent way too much time on T-Swift’s twitter feed when I got home and seemed to have forgotten the awesome post that I was brewing in my brain since 5:00 this morning…
Such is life.
Speaking of life, how’s yours going? I bet I can guess…
I bet it’s crazy busy, right?? You wake up every morning so surprised that it’s already almost the middle of September and you can’t believe how much you have to get done today…
Wasn’t it just May? Weren’t you just sitting on your couch with nothing to do but catching up on reruns of Downton Abbey??
Or is this just me??
Busy or not, let me tell you that I totally appreciate you taking the time to stop by NN and say hey, despite your busy schedule (just pronounced shed-ule in my head). Seriously. If nothing else today, feel appreciated by yours truly.
Because I appreciate you so much, I wanted to share with you this recipe with you…
It’s a recipe for when life gets crazy-hectic, maybe like it is now. See in my life lasagna is always a go-to. I think it has to do with the whole “comfort food” thing… What I like about this recipe is that it kind of switches things up and helps you ‘roll with the punches’… pun totally (and dorkily) intended.
I made this a few weeks back to test out the recipe on some friends. The original recipe was okay, but when I make it again (and I definitely will) I’ll make some changes. Changes like…
- Use ground turkey instead of chicken (I’m not a fan of chicken lasagna)
- Add dried spices like basil, oregano or rosemary (It was slightly bland for my tastes)
- Throw in some frozen spinach in the mix (I feel bad when I don’t see any green among all those carbs)
This type of entree is blowing up Pinterest lately and so I felt like I just had to try it. You know what my favorite thing was???
The individual little rolls. So perfect and already proportioned so you don’t end up stuffing yourself. (Note: No shame if you choose to have 3 or 4, just sayin’)
Perfect for a middle of the week dinner, just make sure you do some planning ahead.
It’s Friday!! T.G.I.F!
xo, Kirby
