For the past two years, some of our friends have been getting together for what’s called “Friendsgiving” the Tuesday before Thanksgiving.
It’s always hosted by my incredibly wonderful and creative friend Mallery who always hosts with a great spread. I mean seriously…

We sat around the table eating, laughing and of course, sharing what we were thankful for.
Everyone brought something to our dinner… bread, drinks, dessert… what did I bring?
I brought my favorite comfort food recipe of course…. loaded mashed potatoes.
This… this my friends, is what I was alluding to at the end of yesterdays post.
They areĀ deliciousĀ and packed full of things that Paula Deen would be so proud to serve.
If you’re in charge of bringing the mashed potatoes tomorrow, I highly suggest these.
You’ll need:
- 8-10 medium size potatoes
- 1 stick butter
- 1/2 cup sour cream
- 1/2 cup half and half (or heavy cream if you’re feeling really crazy)
- 1/4 cup chives-chopped
- 6-7 slices bacon, cooked and broken into small bits
- 1/2 cup shredded cheese
Peel and boil the potatoes until you can stick a fork straight through them. Meanwhile, fry your bacon. Once the potatoes are nice and soft, add in the butter and mash them. Add in the sour cream, half and half, chives, half of the cheese and bacon. Mix well. Sprinkle cheese on top and serve. Serves 8ish (or more).
These potatoes are the essence of home cooked holiday meals.
So pull out your peelers and get to work. Work hard today so you can sit around and catch up with friends and family over a bowl of mashed potatoes or pumpkin pie tomorrow. You won’t regret it.
